My post for "I" would be the Igado, a Filipino dish that is native to the Ilocanos (Northwest part of the country). It was cooked like the Menudo, although there were a lot of variations to this dish.
When I came to live with my Aunt Julie in La Union in 1999, I learned how she cooked the dish - using strips of potatoes and carrots (slightly smaller cuts than the French Fries), and instead of using vinegar, she would use calamansi juice. When brother and I went there last year, she cooked Igado again, although instead of putting potatoes and carrots, she just added raisins.
From what I know of, authentic Igado would include pig's internals - kidneys, heart, pancreas (though not much as this is bitter), and liver... but of course some people don't eat internals, so people can also use pure pork for this dish.
Not my favorite Ilocano dish, but I find this one delicious. However, with my high cholesterol, I don't think I can eat this dish ever again.
