Dinengdeng is a very popular dish term in the Ilocos Region. It's a vegetable dish that is not really confined to specific vegetables, people can actually mix and match different kinds of vegetables. My dad was from the Ilocos Region, so when he was still alive, we would eat different kinds of dinengdeng at least four times a week. It was our way to have veggies in our diet. Nowadays, we still cook and eat dinengdeng, but not as much as when my dad was still here. We still get our veggie intakes, of course, but it's not really thru dinengdeng.
Among all the dinengdeng dishes, this is my favorite. Young papaya and malunggay (Moringa). Very easy to cook, and I love how the flavors of the fruit and veggies and the fried fish tastes like. One of these days, I will cook this again.

It is such a shame that we can't open the little DVD-drawer of the computer and a sample of this dish comes out. I'm so curious how it will taste. And love the sound of 'Dinengdeng'.
